The Paterson family have long been associated with carefully selecting and curing fish by hand since the summer of 1918 when Lewis Gordon Paterson (Snr) came 65 miles north to Buckie from the city of Aberdeen.
Today with the knowledge of four generations, Honesty, skill, commitment, and pride, has been passed down from generation to generation, the family holding on to independence, from the bigger conglomerates.
Smoking and curing fish in a traditional way, Smoking over smouldering Oak chips, from whisky barrels, purchased from Local Distillery cooperages, along with pure Beech wood shavings, the natural flavour of the Salmon, white fish and herrings are then enhanced with this succulent texture of this delicate curing skill, of preservation, that no man or machine can hurry.
J.&.L.Paterson & Sons (Buckie) T/A Cluny fish Ltd today in its up-to date smokehouses prepare and cure a wide range of Fine Scottish Seafood’s, carefully selecting and curing seafood, which includes, Smoked Salmon, Roasted Smoked Salmon, trout, Roasted smoked Trout, Roasted smoked scallops, naturally smoked herrings (kippers), Roasted Smoked Mackerel, Salted Herrings, Smoked Haddock, and now the company has its finger on the pulse with modern technology, as well as traditional methods, with the installation of an ambient seafood production line processing a range of Ambient Gourmet Seafood Pâtés, Soups, and Chowders, Brand Names Along with J& L. A far cry from the old days curing 1000s of barrels of Sprat’s and herrings for the Scandinavian market, when Buckie was the thriving fishing port with over 100 vessels being registered and the port being known as one of the most progressive in Scotland.
